DESCRIPTION
The cultivation areas of this Honduras SHG (Strictly High Grown) are located on the central plateaus ranging from 1,500 to 1,800 m asl where almost exclusively Arabica coffee is produced. These plants grow in the shade of the trees and the characteristics of the soil of the Comayaga region, rich in nutrients, allows no fertilizer to be used to develop an excellent coffee and this characteristic makes it a naturally organic coffee.
This particular quality of washed coffee, with a bluish green color, is harvested once a year, in the months from October to March with the piking method (hand-picked) in order to select only the best fruits. Processing: the grains, once stripped, are immersed in water for about three days. This treatment is used to trigger a small fermentation which, after roasting, will help enhance the taste and aroma of the coffee.
